Weekly Dinner: Nov 13 – Mushroom-y Meatballs and Sweet Acorn Squash

My 3-year-old son helps me make dinner, which means it doesn’t get much easier than this.

It’s kind of like a big delicious lasagna pile – only easier. Enjoy.

You’re probably going to roast pumpkin seeds once a year, so here’s the recipe you want to use.

A cream sauce lasagna crammed with vegetables, chicken, and of course cheese. Which is basically what the title implies.

I take a swing at copying a restaurant’s mac n cheese… and it’s a home run. Baseball!

This year I spatchcocked my turkey and it was amazing. Plus I whipped up a whole bunch of other simple side dishes.

A long arduous and wonderful meal made somewhat easier by the Instant Pot. A big winner at mealtime though.

Following the advice of The Food Lab, I will make all-beef (only beef) hamburgers and top them with all sorts of awesome.

I enjoy a good caprese salad. So what if I try to turn that into a completely filling meal?
